At last the parts are put together: the turkey stock made last week, a quantity of the leftover Christmas turkey cut into bit-size bits, those two stars flavored with chopped onions, carrots, celery and a few leftover and minced red bell pepper strips and radishes. And a large hunk of parsnip thrown in for good measure (and fished out before serving). Did I mention long-grain rice cooked in the broth and peas, added at the end? Well, I should have. (I probably shouldn’t mention but will that I accidentally tossed in a bunch of frozen berries before realizing those not the peas. No harm done.)
On the side, thick slices of cranberry-walnut bread from WheatFields Bakery.
A simple, tasty and mercifully light meal to end the year. May we all eat so well in 2008.
