Summer bounty makes for easy, delicious eating

I had great food this weekend, but I didn’t do anything special. In fact, I managed to have at least three (depending on how you count) of my top five summer dishes.

I had fresh, local cantaloupe, straight up, three times. I had sliced tomatoes straight up once. And I had ratatouille twice (and shared the bounty with friends).

Besides those favorites, I also had sweet corn, which was delicious despite having been in the refrigerator for a week, and a salad made from new potatoes, those leftover wax beans, tomatoes, cucumbers, and leftover broiled salmon, topped with my favorite industrial salad dressing (Ken’s Steakhouse Italian with Romano).

I still have ratatouille in the fridge plus more new potatoes, squash, a big fat tomato and an ear of corn. Yes, it will be another good week. What’s on your menu?
