Tip: Grating citrus rind

April 15th, 2007 · No Comments · Cooking tips, Tools

Instead of rubbing the orange or lemon against the grater, lay the fruit on a cutting board and move the grater against the fruit as you hold it steady with one hand. You’re probably quicker than I am, but it took me decades in the kitchen to figure this one out. If you’re doing it the other way around as I used to do–holding the grater firmly against the counter or cutting board and moving the fruit across it–you will not believe how much better the alternative works.

Of course, if someone would thoughtfully buy me one of those fabulous Microplane graters, it might not matter how I held the lemon. Oh! And I see the price has dropped markedly from a few years ago, so I just may get one for myself one of these days.
