		<description>I haven&#039;t done it enough to have any good advice, Tracy, but I have tossed large dice of raw, peeled sweet potatoes in oil and roasted/ oven-fried them, and they were quite good. I don&#039;t recall their being mushy. Keep trying! :)</description>

		<description>Those look delicious, Janet!  I love sweet potatoes in just about any form, so I&#039;ll have to give your muffins a try.  My favorite uses for sweet potatoes include roasting and pancakes — I&#039;m still looking for a good way to make them into oven fries (all my experiments so far have turned out pretty mushy, but that didn&#039;t stop me from enjoying them).</description>
