I don't recall their being mushy. I love sweet potatoes in just about any form, so I'll have to give your muffins a try. My favorite uses for sweet potatoes include roasting and pancakes — I'm still looking for a good way to make them into oven fries (all my experiments so far have turned out pretty mushy, but that didn't stop me from enjoying them).
